I had some friends over today who tried the chutney and got two requests for the recipe. Here&#8217;s what I used and did.<\/p>\n<p><strong>Ingredients<\/strong>:<\/p>\n<blockquote><p>1\/2  \t c \tpacked light-brown sugar<br \/>\n1\/3 \tc \tcider vinegar<br \/>\n2 \tT \tpeeled and minced fresh ginger<br \/>\n2 \tT \tminced onion<br \/>\n1\/8 teaspoon dried hot red-pepper flakes<br \/>\nPinch of kosher salt<br \/>\n2 1\/2 \tpounds \tgreen tomatoes, seeded and chopped (about 2 cups)<br \/>\n1\/4 cup         raisins<br \/>\n1\/4 \tc \tchopped cilantro<\/p><\/blockquote>\n<p><strong>Process<\/strong>:<\/p>\n<ol>\n<li>Bring the sugar, vinegar, ginger, onion, pepper flakes, and salt to a boil in a small saucepan over medium-high heat. Reduce heat and simmer 5 minutes, until syrupy.<\/li>\n<li>Add raisins.<\/li>\n<li>Add the tomatoes and simmer, stirring, 15 minutes, or until most of the liquid has evaporated and tomatoes are soft. Remove from heat and stir in cilantro.
