Roasted Eggplant and Tomatoes with Tangy Cucumbers and Yogurt

This is my most favorite recipe for summer 2014. I’ve made it many times and making it right now! I love the way the roasted tomatoes taste with the eggplant and the yogurt! Wonderful.
